SHRIMP WITH WHITE AND WILD RICE SALAD

1 lb uncooked medium size shrimp
2 1/2 cups water
2 tbsp crab boil
1 small yellow onion, chopped
3 clove garlic, minced
3 tomatoes, chopped
3 slices bacon, cooked and crumbled, reserve drippings in skillet
1 pkg long-grain and wild rice mixture
Salt and pepper

Peel and clean shrimp, reserving shells. Bring shells to boil in water, with crab boil seasoning. Reduce heat and simmer for 15 minutes. Strain through sieve and set aside about 2 cups.

In the skillet the bacon was cooked in, add onion, garlic and rice to drippings and cook, stirring frequently, until all ingredients are coated with oil and rice kernels are beginning to turn opaque, 3-4 minutes. Add tomatoes, salt, pepper and reserved shrimp stock. Bring to a boil over medium-high heat, reduce heat to low, cover and cook until liquid is nearly absorbed, 20-30 minutes.

Stir in shrimp, cover and cook until shrimp turn pink and liquid is fully absorbed, 5-8 minutes. Crumble bacon over top. Serve. Serves 6
