WEST COAST POTATO SALAD

1 1/2 lb red potatoes, cooked and peeled
1/4 cup chopped green onions
4 tbsp lemon juice, divided
2 tbsp oil and minced parsley
1/2 tsp salt
1/4 tsp pepper
3/4 cup thinly sliced celery
1 lb fresh asparagus, cut into 3/4 inch pieces, steamed and cooled in cold water
1/2 cup sour cream
2 tbsp Dijon mustard
1 tsp dried thyme and tarragon
Place the potatoes in a large bowl; set aside. Combine onion, 3 tbsp lemon juice, oil, parsley, salt and pepper; shake well. Pour over potatoes, add celery and asparagus; toss gently. In a small bowl, combine remaining ingredients and remaining lemon juice; fold into salad.
