THAI BEEF AND NOODLES

1 lb boneless top sirloin, cut 1 inch thick
1/4 cup dry sherry
1 1/2 tsp soy sauce
1 tsp each grated fresh ginger, minced garlic and sesame oil
1/4 to 1/2 tsp crushed red pepper
2 cups cooked ramen noodles
1/4 cup chopped green onion tops
Combine ingredients up to the noodles and marinade at least 15 minutes. Pour off and reserve marinade. Cook beef in a heated skillet, turning once. Remove steak and keep warm.
Dissolve 2 tsp cornstarch in reserved marinade and 1/4 cup water; add to skillet and bring to a boil, stirring constantly. Stir in noodles. Carve steak into thin slices and serve over noodles. Sprinkle with green onions.
