4 sweet onions, peeled and sliced into 8 wedges each
4 tbsp olive oil
1 tsp dried thyme
1/4 tsp pepper
1 tbsp balsamic vinegar
Arrange onions slices flat-side down on a jelly-roll pan. Lightly brush with oil and sprinkle with thyme and pepper. Bake at 350 for 30 minutes. Turn onions over, bake an additional 25 minutes. Drizzle with vinegar just before serving. Serves 8
