CABBAGE PATCH SOUP

2 lbs ground beef
1 cup each chopped onion and celery
2 cloves garlic, minced
1/2 to 1 cup chopped green pepper
1 (6 oz) can tomato paste
3 medium tomatoes, chopped or 1 (28 oz) can diced tomatoes, undrained
2 tbsp chili powder
1 tsp oregano
1 tbsp minced parsley
1 (15 oz) can kidney beans, drained and rinsed
3 beef bouillon cubes
2 cups peeled and cubed potatoes
1 cup carrots
1 head cabbage, chopped (savoy is a good cabbage to use)
8 - 11 cups water
1/4 cup chopped fresh parsley
2 tbsp red wine vinegar
1 tbsp sugar
1 bay leaf
1 1/2 tsp paprika
Salt and pepper


In a large soup kettle, brown beef with onion, celery, garlic and green pepper. Add remaining ingredients excepb cabbage and bring to a boil. Reduce heat and simmer, covered, for 30 minutes. Stir in cabbage; simmer for 30 minutes longer. Remove bay leaves before serving.
