SHRIMP PROVENCALE

24 jumbo shrimp (prawns)
6 tbsp minced garlic and olive oil
1 minced red onion
1 chopped fresh tomato
Juice of 1/2 lemon
1 (18 oz) can chicken stock
3 tbsp chopped parsley and julienned basil, or more to taste
1/4 tsp crushed pepper
3/4 cup butter
Salt and pepper
Sliced crostini
Saute first 5 ingredients until shrimp is golden. Add remaining ingredients except bread and let simmer to sauce consistency. To serve, position 3 large crostini on a plate and place shrimp in center. Pour sauce mixture on top.
