CAMP CHICKEN

3 split chickens
1 cup whiskey and soy sauce
5 tbsp brown sugar
2 tsp dry mustard and salt
1 tsp cayenne pepper
4 cloves garlic, crushed
2 cups minced or ground onion
Wash and dry chicken, trimming fat if needed. Put in heavy plastic food storage bags.
Combine remaining ingredients and pour over chicken. Marinade 2-6 hours, turning once or twice.
Light first and let it burn down to hot coals, 30-40 minutes. Spread coals evenly. Position rack 5-6 inch from heat. Remove chicken from marinade and place skin side down on rack. Cover and grill 10-15 minutes; turn and brush with marinade.
Cook 20-30 minutes more until juice runs clear. Brush with marinade and turn as needed. Serves 6-8
