ITALIAN MEAT LOAF II

2 tsp oil
1 small onion and red bell pepper, finely chopped
2 tsp minced garlic
1 1/2 lb ground beef
1 cup fresh bread crumbs, about 3 slices bread and put into food processor
2 large eggs
3/4 tsp salt and pepper
1 (10 oz) pkg frozen chopped spinach, thawed and squeezed dry
1 cup shredded mozzarella cheese
4 oz thinly sliced Genoa salami, about 20 slices
Bottled marinara sauce
Preheat oven to 350. Heat oil in a skillet and saute vegetables and garlic until softened. Transfer to a large bowl to cool. Add beef and next 4 ingredients and gently mix. Place on a long sheet of foil or plastic wrap and press into a 17x8 inch rectangle.
Top with a layer of spinach, then cheese and then overlapping slices of salami. Roll up from short end; lift into loaf pan. Bake for 1 hours and 10 minutes or until meat is heated through. Let stand 10 minutes before unmolding on cutting board or platter. Slice with a serrated knife and serve with marinara sauce.
