PORTABELLA BRUSCHETTA
Category: Bruschetta, Crostini and Canapes
3 big Portabella Mushrooms, cleaned and chopped
6 cloves garlic, chopped
1 tbsp olive oil
2 tbsp fresh basil, chopped
1/4 cup dried tomatoes
2 tbsp lemon juice
2 slices Ciabatta
Salt and pepper to taste
In a small pan, heat the water until it boils. Remove from heat and add tomatoes. Soak for 15 minutes and puree them.
In a pan, heat olive oil. Saute garlic and mushroom over medium heat until tender, and the liquid released from mushrooms has evaporated. Fold mushrooms into tomato mixture. Season with basil, lemon juice, salt and pepper. Serve with toasted ciabatta. Serves 2
