SHRIMP SCAMPI SALAD

1 medium head romaine lettuce, cut into bite-sized pieces
1/4 cup butter
12 garlic cloves, minced
2 tbsp chopped fresh parsley
1 tbsp fresh lemon juice
1/2 tsp salt
1/4 tsp black pepper
1 lb medium shrimp, peeled and deveined
1/2 cup heavy cream

Place the lettuce in a medium bowl and set aside. Melt the butter in a large skillet over medium heat. Add the garlic, parsley, lemon juice, salt, and pepper; cook for 2 to 3 minutes, or until the garlic is golden, stirring occasionally.

Add the shrimp and cook for 2 to 3 minutes, or until the shrimp turn pink. Reduce the heat to low and stir in the cream until well combined; remove from the heat and place over the lettuce. Toss then serve immediately. Serves 4-6
