CHOCOLATE MACADAMIA NUT COOKIES

10 tbsp unsalted butter, softened – do not substitute
3/4 cup packed brown sugar
1 tsp vanilla extract
1 egg, slightly beaten
1 cup flour
3/4 tsp baking powder
1/8 tsp baking soda and salt
1 1/2 cups chocolate chips
3/4 cups coarsely chopped macadamia nuts and chopped pecans

Caramel Glaze
12 caramel candies
2 tbsp whipping cream

Preheat oven to 350. Lightly grease baking sheets. Combine dry ingredients.

Cream together butter, sugars and vanilla until light and fluffy. Beat in egg. Gradually stir in dry mixture. Stir in chocolate and nuts. Roll 2 tsp dough into ball; place on baking sheet; repeat with remaining dough, spacing 2 inch apart.

Flatten balls slightly; bake 10-12 minutes or until cookies are lightly browned. Cool cookies on baking sheets on rack 5 minutes; with spatula, remove cookies to racks.

For glaze: Melt caramels and cream in saucepan over low heat, stirring until smooth. Drizzle over cooled cookies.
