SHORT RIBS - Easy

3 lbs beef short ribs
1 small onion, chopped
1 garlic clove, minced
1 (6 oz) can tomato paste
1 cup ketchup
3/4 cup packed light brown sugar
1/2 cup white vinegar
1/2 cup water
2 tbsp yellow mustard
2 tsp salt

In a soup pot, brown the ribs on all sides over medium-high heat. Reduce the heat to low, cover, and cook for 1 hour; drain. In a medium bowl, combine the remaining; mix well and pour over the ribs. Cover and cook for 1-1/2 hours, or until the beef is tender, stirring occasionally. Serves 4-6
