SCALLOP KABOBS

1 lb sea scallops
3 tbsp orange juice
2 tbsp soy sauce
1 tbsp honey
1/2 tsp ground ginger
2 medium zucchini, cut into 1 inch chunks
4 wooden skewers, soaked in water for 30 minutes
Rinse scallops briefly in cool water and pat dry on paper towels. Combine next 4 ingredients and add scallops and zucchini. Toss gently to coat. Marinate for 15 minutes, turning occasionally. Alternate the scallops and zucchini on the skewers. Reserve the marinade. Place the skewers on the grill over medium-high heat for 5-7 minutes on each side or until scallops are opaque and zucchini is tender. Brush occasionally with marinade.
