3 lbs beef short ribs
1/3 cup flour
1 tsp salt
3/4 tsp pepper
2 tbsp shortening
1 onion, sliced
1 clove garlic, minced
Hot water
Bay leaf
2 tbsp packed brown sugar
1/4 cup vinegar
2 tbsp soy sauce
1 green or red bell pepper, cut into rings
Flour
Wipe meat off with a damp cloth and trim off excess fat. Combine flour with salt and pepper and dredge meat to coat completely. Heat shortening in a Dutch oven and brown ribs on all sides. Remove from pan and saute onion and garlic until golden. Stir ribs back in.
Combine next 5 ingredients and pour over ribs. Cover and bake at 350 for 1 /34 hours. Add pepper rings and continue to bake and additional 15-20 minutes longer or until meat is tender. Remove to a serving splatter and spoon drippings over all. Serves 4
