Grilled - VEGETATLE STUFFED PORTOBELLO MUSHROOMS

1/3 cup olive oil
1/4 cup red wine vinegar
2 cloves garlic, minced
1/4 tsp salt and pepper
2 (6 inch) zucchini, halved lengthsise
1 lare red bell pepper, halved, stem and seeds removed
6 large Portobello mushrooms, stems removed
1/3 cup prepared pesto sauce
1 (8 oz) pkg mozzarella cheese, cut into slices
Combine first 5 ingredients in a small bowl. Brush zucchini, bell pepper and mushrooms with mixture and allow to marinade at least 15 minutes.
Preheat grill and place about 6 inches from heat sourse. Grill zucchini and pepper until just tender, about 3 minutes on each side. Remove to a cutting board and coarsely chopped.
In a small baking pan, combine chopped vegetablw with pesto sauce; keep warm at the end of the grill.
Place mushrooms on grill, gill side down, cook until lightly browned, about 2-3 minutes. Turn and place a slice of cheese on top of each mushroom. Grill and additional 2 minutes longer or until lightly browned. Mound the reserved vegetables in center of each mushroom cap and serve.
