SAUTEED CHICKEN BREASTS IN RED WINE VINEGAR CREAM

1/4 cup butter
1/2 cup diced onion
4 boneless, skinless chicken breasts
1/2 cup red wine or raspberry vinegar
1-2 cups whipping cream

Melt butter over medium-low heat, saute onion 10-15 minutes. Set aside. Over medium-high heat, saute 4-5 minutes per side, until golden and juices run clear. Set chicken aside. Reduce vinegar by two-thirds, about 2 minutes. Add cream and boil until thickened, about 3-4 minutes. Return onion and chicken to pan. Spoon sauce over chicken and serve. Serves 4
