SPICE TOMATO SAUCE for spooning over meatloaf, poultry, pork or fish

1 can Rotel chunky style diced tomatoes
1/2 cup of ketchup
1 tsp Creole or spicy mustard
2 tbsp packed light brown sugar,
1/2 tsp favorite Cajun/Creole seasoning, or to taste, optional

In a small saucepan, combine the tomatoes, ketchup, mustard, brown sugar, and Cajun seasoning. Bring to a boil, reduce heat and let simmer until heated through and thickened. Spoon hot sauce over slices of meatloaf or other meat, poultry, pork or fish.
