JALAPENO CHEESE DIP

1 lb Monterey jack cheese with jalapenos, grated
1 (8 oz) container sour cream
1/4 cup mayonnaise
1 large clove garlic, minced
2 oz chopped pimento
3 green onions, finely chopped

Preheat oven to 350. Mix together first 4 ingredients. Do not cover and bake for 20 minutes, stirring occasionally. Mix in half the pimento and onion. Bake and additional 5 minutes. Garnish with remaining pimento, and green onion.

NOTE: Can be prepared ahead of time and refrigerated up to 1 week and reheated until hot. Stir well to combine.
