GRANOLA BRUNCH CAKE

1/2 cup butter
3/4 cup brown sugar, packed
2 eggs
1 tsp vanilla
1 cup granola
1 1/2 cups flour
1 tsp cinnamon and baking soda
1/2 cup milk

Crunch Topping
3/4 cup granola
1/4 cup brown sugar
1 1/2 - 2 tsp melted butter
Fresh strawberries, garnish

Cream together butter and sugar. Beat in eggs and vanilla. Stir in the granola. In another bowl, combine the dry ingredients. And mix into the butter mixture alternately with the milk. Blend well, but do not over mix. Pour into an 8x8 inch baking pan.

Combine the topping ingredients. Sprinkle over the batter. Bake at 350 for 40 minutes or until wooden pick comes out clean from center of cake. Cut into squares to serve. Garnish with strawberries, if desired.
