FRUIT PIE PIZZA

40 oz mandarin orange sections, drained well, reserving juice
8 oz pineapple, drained well, reserving juice
1 (8 oz) pkg cream cheese
2 tbsp butter
1 cup biscuit mix
1/2 cup sugar
2 tbsp cornstarch
1/4 tsp salt
1/4 cup lemon juice
1/4 tsp lemon peel
1 pint strawberries, halved
Seedless grapes, halved
Cherries, halved
Crust: Cut 3 oz of cream cheese and butter into biscuit mix until it resembles coarse crumbs; then form into a ball. Pat out dough on a lightly greased 12 inch pizza pan. Use a fork to flute the edges. Bake at 425 for 8 minutes or until lightly browned; cool.
Glaze: Combine in a saucepan 1/4 cup sugar, cornstarch and salt. Add 1 1/2 cups reserved fruit syrup and lemon juice. Cook until the mixture thickens, stirring often. Boil 3 minutes; cool.
Cream cheese spread: Stir in remaining cream cheese, 2 tbsp reserved fruit syrup, remaining sugar and lemon peel until smooth; spread on cooled crust. Arrange fruits in circles on cream cheese spread in following order from outside in: orange slices, strawberries, grapes, pineapple, oranges and cherries in center. Brush some glaze over fruits. Cut into wedges. Top with remaining glaze.
