DELICIOUS CHICKEN PASTA - Paul Prodhomme

2 boneless, skinless chicken breasts, cut into thin strips
1 cup chopped onions
1/2 cup chopped celery and green bell pepper
1 tbsp Prodhomme Meat Magic seasoning
2 cup chicken stock
2 tbsp flour
3 cups thinly sliced mushrooms
1 tsp minced garlic
1/2 cup chopped green onions
6 oz pasta, fettuccini or angel hair), cooked al dente

Place chicken strips in a bowl and combine thoroughly with 2 tsp meat magic. Place a skillet over high heat and add chopped vegetables and remaining meat magic. Cook over high heat and stirring occasionally for 5 minutes.

Add 1/2 cup chicken stock, start scraping up the browned coating on the bottom of the pan; cook another 4 minutes. Stir in chicken mixture; cook 4 minutes. Add flour and stir well, cooking another 2 minutes.

Add mushrooms and garlic, folding in carefully so mushrooms don’t break up. Add 1/2 cup chicken stock; scrap up pan bottom. Cook 4 minutes and add another 1/2 cup stock, stirring and scraping. Continue cooking another 5 minutes, and then add green onions and the remaining 1/2 cup stock. Stir and scrape well. Cook 5 more minutes and remove from heat and stir in pasta.
