SHELLS WITH SWEET SAUSAGE AND CREAM

8 sweet Italian sausages, cases removed
1 medium onion, finely chopped
1/2 lb sliced mushrooms
3 cloves garlic, minced
1/4 cup dry white wine
1 (14 1/2 oz) can Italian style diced peeled tomatoes with juice
2 cups heavy cream
2 tbsp cognac
White pepper, taste
6 tbsp chopped Italian parsley
1 lb shell pasta or penne pasta, cooked al dente, drained

While pasta is cooking, in a skillet break up sausage and add vegetables and garlic. Brown meat over low heat until crumbled. Add wine and continue to cook until it evaporates; stirring occasionally. Add tomatoes with juices and simmer and additional 3 minutes. Add cream and cook until thickened, about 5 minutes. Add cognac, pepper and 4 tbsp parsley. Pour sauce over pasta and add 3/4 cup cheese and toss to coat. Sprinkle with remaining cheese and parsley.
