HERBED RED POTATOES

1 1/2 lbs red potatoes, scrubbed and cut in half
1 tbsp olive oil
1 medium sweet onion, chopped
1 clove garlic, minced
1 cup chicken broth
1 cup fresh minced parsley, divided
1/2 tsp pepper
Salt, to taste
1-2 tbsp butter
Heat a skillet over medium heat and add oil. Saute the onion and garlic for 5 minutes until softened. Do not scortch. Add the broth and 3/4 cup parsley, salt and pepper and bring to a boil. Add potatoes until tender.
Drain cooked potatoes and place in a serving bowl. Season with additional salt and pepper and toss with butter and sprinkle with parsley.
