MARINATED PARMESAN WEDGE

8 oz parmesan cheese chunk
1 clove garlic, finely chopped
2 tbsp finely chopped green onion
1 tsp dried red chili flakes
1/2 cup extra virgin olive oil
2 tsp finely chopped fresh oregano, tarragon or basil
Freshly ground pepper
Picks and crusty bread
Break the parmesan into small bite-sized pieces.
Combine oil, garlic, onion and chili flakes in bowl or jar and let flavor blend for at least an hour. This flavored oil will keep refrigerated for several weeks.
Place cheese in serving dish and sprinkle with fresh herbs. Pour seasoned oil over cheese and sprinkle liberally with freshly ground pepper. Serve with picks and slices of bread/baguette. Serves 6 - 8 as an appetizer
NOTE: Cheese is best served at room/air temperature for maximum flavor.
