GARLIC PORK ROAST

5 lb pork loin roast, backbone loosened
1/2 medium green or red bell pepper, finely chopped
1/2 cup thinly sliced gren onions
1/2 cup chopped celery
8 cloves garlic, minced
1 tsp salt
1/4 tsp cayenne pepper
With a sharp knife, cut a deep pocket between each rib on meaty side of roast. Combine vegetables and garlic and stuff deeply into pockets. Season roast with salt and pepper.
Insert meat thermometer and place roast, rib side dow, in a shallow roasting pan. Bake, uncovered, at 325, for 2-3 hours or until thermometer reads 170 degrees. Let roast stand about 15 minutes before slicing.
