CHEESY STUFFED SMOKED PORK CHOPS

6 Thick-Cut Smoked Pork Chops (8 oz each)
1 cup soft bread crumbs
1 cup shredded smoked mozzarella or smoked Gouda cheese
3/4 cup chopped ham
1/2 tsp ground black pepper, divided
1-1/2 tsp butter, melted
2 tbsp olive oil
1/2 tsp salt
Preheat oven to broil. Cut a pocket in the pork chop by cutting along the rounded side and up to the bone. Combine breadcrumbs, cheese, ham, and 1/4 tsp pepper. Add melted butter; mix well. Stuff about 1/3 cup of filling into each pocket, secure closed with toothpicks.
Brush one side of chops with olive oil, season with salt and remaining 1/4 tsp pepper. Place on broiler pan in oven; set broiler pan 3 inch from heat. Broil for approximately 4 minutes.
Remove from oven, turn chops over, brush with olive oil, season with salt and pepper and return to oven. Broil for approximately 4 more minutes, or until lightly brown. Serve immediately. Serves 4-6
