APPLE STREUSEL COFFEE CAKE

Cake
1 cup flour
1 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt
1/4 cup butter, softened
1/2 cup sugar
1 egg
1 tsp vanilla
3 tbsp nonfat plain yogurt
2 cups thinly sliced, unpeeled apples

Topping
1/4 cup flour
2 tbsp brown sugar
1/2 tsp cinnamon
2 tbsp butter

Preheat oven to 350. Spray an 8- or 9 inch square pan with cooking spray.

Cake: In a small bowl. Combine dry ingredients. Set aside. In a large combine butter and sugar; beat until light and fluffy. Add egg and vanilla; blend well. Alternately add flour mixture and yogurt to butter mixture. Beat well after each addition. Spread batter in pan. Arrange apple slices over batter.

Topping: Combine ingredients except butter. With a pastry blender or fork, cut in butter until crumbly. Sprinkle evenly over apples. Bake at 350 for 30-35 minutes. Cool 10 minutes.
