APPLE CINNAMON COFFEE CAKE I

Filling and topping
2 tbsp cinnamon
5 tbsp sugar

5-6 cups sliced apples (Granny Smith or Macintosh)
Cake
2 cups sugar
1 cup applesauce
4 tsp vanilla
1/2 cup orange juice
Pinch salt
4 eggs, lightly beaten
3 cups flour
1 tbsp baking powder
1 tsp nutmeg
1/2 cup chopped pecans, optional

Preheat oven 350. Grease a 12-cup tube or bundt pan with cooking spray. Combine filling ingredients together and set aside 1 tbsp. Toss prepared apples with remainder of the mixture.

Cake: Whish together first 6 ingredients together. Combine remaining ingredients and fold into sugar mixture. Spoon a little more than 1/3rd of the batter into prepared pan. Cover with half the apple mixture, continue layering ending with apples. Sprinkle top lightly with reserved cinnamon-sugar mixture. Bake for 1 hour or until done. Loosen sides and invert cake on a plate.
