APPLE BUTTERNUT COFFEE CAKE

Bottom Layer
1 cup sugar and flour
1/2 tsp baking powder, salt and vanilla
1/4 cup butter and milk
1 egg
1/2 cup coconut

Middle Layer
1 cup apple pie filling
1 tsp cinnamon

Topping
1/8 cup butter
1/2 cup confectioners sugar
1/2 cup flour
1/4 tsp baking powder, salt and vanilla
1 egg
1/2 cup pecans, chopped

Mix bottom layer ingredients together and spread in a well greased 9 inch cake pan. Put middle mixture on top then mix together to topping ingredients and spread over fruit mixture to cover. Bake at 350 for 30 minutes. Variation: Use Cherry pie filling instead of apple.
