DEEP DARK CHOCOLATE FUDGE COOKIES

7 oz semi-sweet chocolate
2 1/2 oz unsweetened chocolate
3 tbsp butter
1 cup sugar
3 eggs
1 1/2 tsp strong brewed coffee
3/4 tsp vanilla extract
3/4 cup flour
1/2 tsp baking powder
4 oz chocolate, chopped
3/4 cup chopped nuts

Preheat oven to 350. Coarsely chop chocolate in a saucepan and add the butter. Heat over a double boiler, stirring until melted and smooth. Remove from stove and cool to lukewarm.

Combine sugar and eggs; mix in coffee and vanilla and beat until very thick and mixture turns a pale color, about 6 minutes. Add dry ingredients. Stir in reserved chocolate and nuts.

Bake 12 minutes or until cookies are puffed and feel soft to touch. Allow to cool 1 minutes before removing cookies to wire racks to cool.
