POTATO BASQUE SOUP

1 lb Italian sausage
1/2 cup chopped onion
2 (1 lb) cans tomatoes
4 potatoes, peeled and diced to equal 6 cups
1/4 cup chopped parsley
1 cup diagonally cut celery
2 tbsp celery leaves
1 1/2 cups water
2 beef bouillon cubes
1 bay leaf
1 tbsp salt
1/2 tsp lemon juice

In a Dutch oven, brown sausage. Add onion and cook 5 minutes. Add remaining ingredients and bring to a boil. Reduce and simmer uncovered 40 minutes or until potatoes are tender. Serves 6
