COWTOWN SHORT RIBS

3 lbs boneless short ribs, cut in 2 inch pieces
1/4 cup vegetable oil
12 oz beer
16 oz medium-hot salsa
1/4 cup soy sauce
3 tbsp honey
6 cloves garlic, grated
1 1/2 tbsp grated fresh ginger
1/2 bunch cilantro, leaves only
Preheat oven to 350. Trim ribs of excess fat and silver skin. In a large skillet over medium heat, warm the oil. Add the ribs, and brown on all sides. Remove from skillet to a rack set over a baking sheet, and drain.
Transfer ribs to a 13x9 inch baking pan. Add remaining ingredients except cilantro, and mix well. Cover tightly with foil. Bake for 1 1/2 hours, stirring occasionally. Remove foil, and bake 30 minutes longer, until ribs are tender and sauce is thick. Garnish with cilantro. Serves 6
