MARINATED SHRIMP

Category: Seafood

2 lb shrimp, peeled and deveined
2 medium onions, thinly sliced
1 1/2 cups oil and white vinegar
1/2 cup sugar
1 1/2 tsp celery seed
4 tbsp capers with juice

Cook shrimp 40-60 seconds in boiling water or until pinks. Do not overcook. Drain and rinse in ice water. Layer shrimp and onion in a large bowl. In a separate bowl, combine remaining ingredients, mixing well. Pour mixture over shrimp and onions. Marinate in refrigerator for 24 hours can be up to 3 days. Serve with toothpicks and cocktail sauce.
