ITALIAN MACARONI AND CHEESE

1 lb macaroni, cook, but not quite al dente
2 tbsp breadcrumbs
3/4 cup grated parmesan cheese
1 tbsp unsalted butter
1/2 cup cheddar cheese, grated
1 cup mozzarella, grated
1 egg yolk, beaten
2 tbsp cream
1/4 tsp nutmeg and cayenne pepper
Salt and pepper, to taste

Preheat oven to 450. Meanwhile combine breadcrumbs with 2 tbsp parmesan cheese and set aside.

In a saucepan, melt butter over medium heat. Add all the cheeses, beaten egg yolk and cream. Stir and cook until melted. Season with spices after cheese has melted. Add pasta and combine thoroughly.

Place in buttered individual serving dishes and top with breadcrumb mixture. Bake in the oven until golden brown and crisp, approximately 10 minutes. Serves 6
