HEY CURLY, WHERE\\\'S MOE A LA CHANCERY

8 oz curly, ramen noodles, dry
1lb. - 4 oz chicken breast pieces
1 oz vegetable oil
8 oz yellow squash, 1/2 moons
4 oz pea pods, picked
8 oz broccoli, florets
4 oz red pepper, julienne
8 oz carrots, shoestring cut
Sweet and Spicy Sauce
3/4 cup sugar
1 cup soy sauce
1-3/4 cup water
2 tbsp sesame oil
1 tbsp Chinese chili with garlic
1/4 tsp garlic powder
1 tbsp corn starch
2 tbsp water
Place curly noodles in simmering water and cook for three minutes; drain. Saute the chicken in vegetable oil in nonstick saute pan. When the chicken is almost finished add the vegetables and stir-fry until crisp-tender. Add the sauce and toss to coat. Simmer for 1 minute. Place noodles on serving platter or bowl and top with stir fry mixture. Serve. Serves 4
Sweet and Spicy Sauce: Combine the first six ingredients in a sauce pan and heat to low boil. Mix corn starch and water and add to boiling mixture, stirring constantly. Bring back to a boil for ten minutes.
