CREOLE POT ROAST - Crock Pot

2 slices bacon, diced
1 tsp pepper
4 lb roast
1 green chili pepper, seeded and minced
1 bay leaf
1/2 tsp dried thyme
2 cups diced tomatoes
1/2 tsp sugar
1 stalk, chopped
1 onion, chopped
2 clove garlic, minced
2 tbsp chopped parsley
Fry bacon until cooked but not crisp in a large skillet. Remove and set aside. Season the roast and brown on all sides in drippings. Transfer to the crock pot.
Add remaining ingredients, cover and cook on LOW for 8-10 hours. Add reserved bacon, cover, turn on HIGH and cook 15 minutes. Remove roast from pan and let rest about 10 minutes before slicing.
