* NOODLES FLORENTINE*

16 oz pkg curly wide egg noodles, cooked as direct, drained but reserve 1/4 cup cooking pasta water
Slat
2 tbsp chopped walnuts, toasted
3 tbsp olive or salad oil
1 chopped onion
2 tbsp flour
1/8 tsp pepper
1 tsp salt
2 1/2 cups milk
1 (10 oz) pkg frozen chopped spinach, thawed, drained and squeezed dry
1/3 cup grated parmesan cheese
Additional grated parmesan cheese

In a skillet, heat oil and cook onion until tender but not brown. Stir in flour, pepper and salt; cook for 1 minute. Gradually add milk and cook, stirring until mixture thickens and is smooth. Stir in spinach, cheese, reserved pasta water. Stir in noodles; heat through. Sprinkle with nuts and additional cheese for garnish.
