1/2 head iceberg lettuce and romaine lettuce
1/4 cup slivered almonds
2 tbsp sugar
1 tbsp minced parsley
2 green onions and tops, sliced fine
1 can mandarin oranges, drained
Dressing
4 tbsp sugar and vinegar
1/2 cup salad oil
1 tsp salt
Dash of pepper and hot pepper sauce
Caramelize almonds by placing them and the sugar in a saucepan over low heat, stirring constantly till sugar melts and turns brown. Remove from heat and break apart. Toss remaining salad ingredients in a bowl and add the dressing and almonds just before serving.
Dressing: Combine in ingredients in a food processor to mix well.
