SAUSAGE CHEESE SQUARES

4 cups shredded mozzarella cheese
2 lb mild or hot Italian sausage
1 large onion; finely chopped
2 cloves garlic, pressed or minced
1/4 lb mushrooms, sliced
1/2 tsp basil, mint and oregano
1/4 cup chopped parsley
8 eggs
1/3 cup fine dry bread crumbs
1/4 cup grated parmesan cheese

Remove casings from sausage and crumble meat into a wide frying pan. Cook over medium high heat; stirring until browned. Drain off and discard all but 2 tbsp of fat. Add next 7 ingredients to sausage in pan. Cook, stirring until onion is soft. In a large bowl, beat eggs until blended. Stir in bread crumbs, cheeses and sausage mixture. Pour into a lightly 10x15 inch baking pan and spread out evenly. Bake at 325 until mixture is firm in center when lightly touched, 30-35 minutes. Let cool. Cut into 1 inch squares.
