1 pkg (15 oz) refrigerated pie crust, (2 crusts)
1 cup julienne sliced leftover ham
1/2 cup shredded Gruyere cheese or Swiss cheese
1 cup milk
3 large eggs
1 tbsp chopped fresh thyme
1/4 tsp freshly ground black pepper

Preheat the oven to 400. Let crusts stand at room temperature for 15 before unfolding; cut each crust into 4 equal parts. Roll out dough and divide among eight, 4 1/2 inch individual tart pans. Line each tart shell with parchment paper and fill with pie weights or dry beans.

Place tart shells on baking tray and bake for 5 minutes. Remove tart shells from oven and lift off parchment paper and pie weights. Equally divide ham and cheese between tart shells. Mix together milk, eggs, thyme and pepper. Pour milk mixture into each shell. Place tarts back into the oven on baking sheet and continue to bake another 18-20 minutes, or until the filling is set. Cool tarts for 10 minutes on wire rack before serving.
