BAKED FISH DIJON - Easy

1 1/2 lbs firm white fish fillets (flounder, sole, code, Pollack, tilapia or orange roughy)
Juice from 1 lemon
1 tbsp olive oil and Dijon-style mustard
1-2 tbsp mayonnaise
1 tsp dill weed
1/2 tsp pepper
1/4 tsp garlic powder and Old Bay Seafood seasoning
1 carrot, shredded sharp cheddar cheese
3 tbsp grated parmesan cheese
Preheat oven to 350. Rinse and pat dry fillets with paper towels and place in a casserole dish overlapping thinnest portions. Brush with lemon juice; set aside.
Combine next 7 ingredients and drizzle fish with dressing. Cover with shredded carrots and sprinkle with cheese. Bake for 12 minutes or until fish flakes easily with a fork.
