CHOCOLATE ALMOND MACAROONS

3 tbsp butter, softened, melted
1/2 cup cocoa
1 can sweetened condensed milk
2 tsp vanilla extract
1/8 tsp salt
14 oz pkg sweetened shredded coconut
1 1/2 cups sliced almonds, toasted and coarsely chopped
Preheat oven to 350. In a large bowl, stir cocoa with butter until blended. Add next 3 ingredients and stir until well blended. Add coconut and stir until well blended. Stir in almonds.
Shape 1/2 tbsp of mixture into balls and place on a baking sheet lined with parchment paper. Bake 7-9 minutes or until edges are lightly browned. Transfer cookies to wire rack to cool. Store in a single layer between sheets of waxed paper in an airtight container.
