GREEK ARTICHOKE PASTA

10 oz pasta of choice
1 (14 oz) can artichoke hearts, drained and chopped
8 oz feta cheese, coarsely crumbled
2 plum tomatoes, cored and diced
1/2 cup red onion, sliced
2 cloves garlic, sliced
1/2 cup black olives, sliced
1/4 tsp red pepper flake
3/4 cup olive oil
Juice of 1/2 lemon

Cook pasta according to pkg. Cook red onions and garlic in olive oil over medium heat. Set aside. (Cook until the onions become golden in color).

Combine cooked pasta with all the ingredients. Stir well and serve NOTE: Cooked chicken breasts or shrimp are good tossed into this pasta dish.
