PORK CHOPS WITH SWISS MUSHROOM SAUCE

4 (1 1/2 inch) boneless pork center loin chops
1-2 tsp oil
2 cups sliced mushrooms
3/4 cup chicken broth
4 tsp cornstarch
1/4 tsp dried tarragon, crushed
1 oz slice Swiss cheese, torn
1 tbsp dry white wine

Heat a skillet and add oil; swirl to coat. Add pork chops. Brown on both sides. Remove meat. Cover meat tightly with foil. Let stand about 10 minutes with preparing sauce.

Add mushrooms to skillet. Saute until tender.

Combine broth, cornstarch and tarragon in a saucepan stirring until thickened and bubbly. Stir in cheese until melted. Stir in wine. Add broth mixture to browning dish with mushrooms and heated through. Serve mushroom sauce with pork chops. Serves 4
