MOLASSES-RUM BBQ SAUCE

2 tbsp oil
1 large yellow onion, diced
2 tsp ground ginger
2 tbsp minced garlic
1 cup rum
1/2 cup red wine vinegar
1 cup catsup
1/2 cup molasses
1/4 cup brown sugar, lightly packed
1 tsp ground allspice
1 pinch ground mace
Salt and pepper, to taste

Saute onions in oil, stirring occasionally, 5-7 minutes, until transparent. Add ginger and garlic and saute, stirring for 1 minute. Add remaining ingredients and bring just to a boil. Reduce heat to low and simmer gently for 20 minutes. Remove from heat and season to taste. Makes about 1 quart.
