GERMAN BEEF STEW

1-1/2 lbs beef stew meat (1-inch cubes)
2 tbsp cooking oil
1 large apple, pared and grated (approximately 1 cup)
1 medium carrot, grated (approximately 1/2 cup)
1/2 onion, sliced
1 clove garlic, minced
1/2 cup beef stock/ broth
1/3 cup dry red wine
1 small bay leaf
3 sprigs of fresh thyme
1/2 tsp dill weed, crushed
1 tsp salt
4 tsp cornstarch
1/4 cup cold water
4 cups medium noodles, cooked and drained
1/4 tsp poppy seeds
Brown meat in hot oil. Add apple, carrot, onion, beef stock, wine, garlic, bay leaf, thyme sprigs, dill weed and salt. Cover and cook over low heat for 2 hours or until beef is tender. Remove bay leaf.
Combine cornstarch and the cold water; add to beef mixture. Cook and stir until thickened. Serve over hot noodles that have been sprinkled with poppy seeds.
