MEDITERRANEAN ORZO SAUTE

2 tbsp olive oil
1 small red onion, cut into half moons
1/2 lb orzo, cooked al dente, drained
2 medium tomatoes, chopped
1 (6 oz) jar Spanish stuffed queen olives, drained and halved
3/4 cup crumbled feta cheese, 4 oz
1/4 cup toasted pine nuts
1/4 cup lemon juice
3 tbsp chopped fresh basil
1 tbsp chopped fresh Italian parsley
Salt and pepper, to taste
Heat oil in a large skillet and saute onions for 3 minutes. Stir in remaining ingredients and season with salt and pepper. Serves 4
