SANTA FE CUTLETS

3 tbsp flour
1/4 tsp salt
1/8 tsp pepper
1 lb pork cutlets, 1/4 inch thick
3 tsp oil, divided
1/2 cup salsa and frozen corn
1/4 cup water, sour cream and chipped cilantro

Combine 1st 3 ingredients and dredge cutlets in mixture. Heat 2 tsp oil in a skillet and saute half the cutlets about 1 1/2 minutes per side or until cooked. Remove to a plate. Repeat with remaining oil and cutlets. Cover and keep warm.

After removing cutlets from skillet, add salsa, corn and water. Simmer 1 minute. Turn off heat, stir in sour cream and cilantro. Serves 4
