MARINATED SHRIMP I

3 tbsp cider or white wine vinegar
1/2 cup lemon juice
1 1/2 tbsp Dijon mustard
2 cloves garlic, minced
1 1/2 tsp salt
1/2 cup olive oil
1 (4 oz) jar diced pimiento, undrained
1 (4 oz) can sliced blacked olives, undrained
1 small red onion, thinly sliced
1/2 cup fresh dill, minced
2 tbsp ground shrimp boil seasoning, Old Bay
2 lbs frozen, peeled and deveined shrimp

Marinade: Whisk together first 5 ingredients and slowly whisk in oil. Stir in next 4 ingredients. Set aside while cooking the shrimp.

Fill a large pan with water and stir in shrimp boil seasoning. Bring to a boil over high heat. Add frozen shrimp and cook just until centers are cooked through, about 3-4 minutes. Let cool at room temperature up to 1 hour, stirring occasionally.

Cover bowl and refrigerate 2-3 days. Stir mixture 3-4 times a day. Serve chill shrimp arranged on a platter or piled into a serving dish. Spear shrimp with toothpicks.
