NORB ANDYS SEAFOOD PASTA

2 tbsp olive oil
1 pint vermicelli or angel hair pasta
1 quart heavy whipping cream or half-and-half
1/2 lb butter mixed together with 2 tbsp minced garlic
1/2 cup parmesan cheese
1/4 lb EACH shrimp, scallops and crab or white fish
1 cup fresh sliced mushrooms
1 cup diced tomatoes
1/2 cup green onions
salt and pepper, to taste
Cook pasta in olive oil until al dente. Strain. In a large saute pan, saute all vegetables lightly in garlic butter, add seafood. Cook 1-2 minutes.
Add cream and let reduce 4-5 minutes or until sauce is slightly thickened. Add cooked pasta and season with salt and pepper to taste. Gently add parmesan cheese. Serves 4 Note: if sauce is to thick, add more cream and less cheese.
